Azienda Agricola Salis, a passion handed down from father to son
From the grandparents to Pietro, and on to Chiara and Nicola, the youngest members of the family.
The wine is called “GALU”, a limited-edition, numbered Nepente di Oliena, the fruit of the land, the wisdom and the craftsmanship of Oliena. We are a small, family-run winery. We began bottling in 2021, producing 1,650 bottles; in 2022, we produced 2,050; in 2023, 1,350; in 2024, 1,300; and in 2025, satisfied with the market trend, we will produce 3,300. We produce a single wine. Only in Oliena can a wine made with Cannonau grapes be called "nepente," meaning "without sadness." Galu is made with 100% Cannonau grapes.
The wine is made from grapes from three different vineyards, 50, 45, and 20 years old. The soils are medium-textured with granite disintegration. The training systems include spurred cordon and bush vines. The grapes are chilled overnight before pressing, followed by a 48-hour cold maceration and fermentation with carefully selected yeasts.


The wine ages in stainless steel and spends two months in concrete tanks. It is bottled in June or July and released to the market about a year later. For the winery's logo, we decided to stylize a petroglyph from a cave in Sardinia, making it resemble an ant. This is because in Oliena there are many families with the surname Salis, so to distinguish them from one another, each has a nickname.
My family's nickname is ant. The yellow ant represents my great-grandfather and grandfather. My great-grandfather always worked in the vineyards, while my grandfather worked as a tractor driver and tended the vineyards in Oliena; both made wine. The black ants, reminiscent of an anthill, represent me, my father, and the rest of the family.


The name Galu, a Sardinian word meaning "still," has a double meaning: on the one hand, it symbolizes continuity, since the whole family has made wine and I will continue to do so — I graduated in oenology in December. The second reason is that I hope that after drinking the first glass, you will want another.
